You can use Enthusiast without Essentials but in order to get the full benefit, you should have Essentials also.

I know this may seem like a silly question, but are you sure you have Essentials or Enthusiast and not Stitch Artist? Stitch Artist only includes the one block font. You can do a satin edge in StitchArtist Level 1. You will need something to give you the lettering needed. Hi! In Express, you do have the line spacing slide bar to add or reduce the space between all the lines of text. If you different spacing between the lines, you will need to add a separate text box for that text so it can be moved independently. I hope this is helpful.

Are you sure it is omitting the last object and not combining it with the previous object. Some formats will combine same colors that are next to each other in the file.

Once you have added a color stop and changed that color in the design you add an object to the design. You then select the object from the object tree and delete the object.
